Potatoes, Vegetables & Sides
2 Tbs Olive oil
1 ea Onion, chopped
1 lb Brussels sprouts, ends trimmed
1 tsp Salt
1/2 tsp Black pepper
1/2 cup Chicken broth

Turn on a multi-functional pressure cooker and select Saute function. Heat olive oil and cook onion until translucent, about 2 minutes.
Add Brussels sprouts and cook for 1 minute more.
Sprinkle with salt & pepper; pour chicken broth over Brussels sprouts. Close and lock the lid. Select high pressure & set timer for 3 minutes.
When finished cooking, release pressure carefully using the quick-release method, about 5 minutes. Unlock & remove lid.
Strain off remaining liquid using a colander and, if desired, brown sprouts & onions in saute pan with butter & olive oil before serving.
